Reducing bread waste through product and service design

Bread waste was calculated to be 80410 tons/year in Sweden, the equivalent of 8.1 kg per person/year, and was found to be concentrated at households and in retail, specifically at the supplier-retailer interface. The cost is SEK 2.4 billion per year if you calculate a cost of SEK 30 per kilo of bread.*

How might we reduce bread waste at home? We developed a new product concept featuring the Portuguese bread soup, to provide a delightful dining experience by utilizing the forgotten bread at people’s homes.
